About the spirit behind Knead BakeryUntil I was 11 years old I lived in a small barrio about 2 hours from Manila. I would wake up to many roosters, all trying to outdo each other, and to loud announcements screamed by young boys, "Pandisa!, Pandisal!" ("Bread!, Bread!"). Those words were music to my ears, it meant that small, crusty warm rolls would soon be ready for me to dip into my flavored milk, or weak coffee. I love this memory of my childhood, warm fresh rolls welcoming each new day, so simple yet so perfect! So, when bakery space became available in Hood River, those memories resurfaced strongly, and the passion to make Knead Bakery a reality, sprang forth.
